- 4tablespoons olive oil
- 500grams puy lentils, ready cooked
- 2 medium red onions, peeled and quartered
- 1 large lemon, juice and zest
- 1/2 bunch parsley, fresh, chopped
- 1/2 bunch basil, fresh, chopped
- 400grams feta, 2 blocks
- 400grams cherry tomatoes
- 200grams spinach
Description
This creamy and delicious feta and lentil traybake is perfect served with crusty bread for scooping.
Method
Step 1 of 3
Pre-heat the oven to 180°C/160°C fan-forced. Toss the red onions and half of the oil in a roasting tin and roast for 15 minutes. Whisk the lemon juice, zest, half of the chopped herbs and the rest of the olive oil together in a small bowl to make a dressing.
Step 2 of 3
Stir the lentils into the roasting tin along with the spinach. Place the blocks of feta in the middle of the roasting tin and surround with cherry tomatoes. Drizzle over the dressing and toss to combine.
Step 3 of 3
Roast for 30 minutes until the tomatoes are soft and the feta is a little golden on the edges. Serve with the rest of the parsley and basil scattered on top, and extra olive oil if desired.
