- 750grams pork rashers
- 1/2 avocado, finely chopped
- 150grams rice noodles, to serve (to serve)
- 1/4 cup coriander leaves
- 1tablespoons fresh ginger, finely grated
- 2 spring onions, thinly sliced
- papaya, deseeded, finely diced
- 2tablespoons hoisin sauce
- 1tablespoons lemon juice
- 1tablespoons reduced-salt soy sauce
- 1tablespoons olive oil
- 1tablespoons hot chilli sauce
- 1/4 cup apple juice
Method
Step 1 of 4
Combine sauces, apple juice and ginger in a bowl. Add pork and turn to coat. Set aside for 10 minutes.
Step 2 of 4
Meanwhile, combine papaya, avocado, coriander, onion, oil and lemon juice in a bowl. Season with salt and pepper. Prepare noodles as per packet instructions.
Step 3 of 4
Heat a large frying pan over medium heat. Remove pork, reserving marinade, and add to pan. Cook, turning occasionally, for 8-10 minutes or until pork is cooked through. Transfer to a board and cut into pieces.
Step 4 of 4
Add reserved marinade to pan and bring to the boil. Cook for 1 minute or until reduced slightly. Drain noodles and serve with pork, salsa and sauce.
