- 200grams fresh spinach, rinsed and roughly chopped
- 1tablespoons paprika
- 1 pinch salt

Method
Step 1 of 2
Put the oil, raisins, and pine nuts in a shallow frying pan over a medium heat. When the raisins and pine nuts start to sizzle, cook for 2 minutes, moving them all the time. Carefully add the sherry and cook until the liquid has reduced by half.
Step 2 of 2
Add the spinach and paprika and cook, stirring constantly, for 5 minutes, or until the spinach has wilted. Season with salt and black pepper and serve hot or cold.
