  • 1 onion, finely chopped
  • 1 pinch salt
  • 2 cloves garlic, grated or finely chopped
  • 1 fresh hot green chilli, deseeded and finely chopped
  • 675grams lean beef mince
  • 1 1/4 cup vegetable stock, hot
  • 4 tomatoes, skinned and chopped
  • 1 handful fresh coriander, finely chopped
  • 8 taco shells
  • 75grams strong Cheddar cheese, grated

Method

Step 1 of 2

Preheat the grill to hot. Heat the oil in a frying pan over a medium heat. Add the onion and a pinch of salt, and sauté for a couple of minutes until soft and translucent. Add the garlic and chilli, and sauté for a few seconds before adding the beef mince. Cook, stirring, until no longer pink, adding just enough of the stock to prevent the meat sticking, but not so much that it gets too wet.

When the beef is cooked, stir in the tomatoes and coriander. Spoon the mixture into the tacos, and top each one with grated cheese. Sit the tacos upright in an ovenproof dish, and put under the grill until the cheese has melted. Serve hot.
