  • 1kilograms beef mince
  • 1 large brown onion, finely sliced
  • 3 slice bread (day old or lightly toasted)
  • 1 broccoli, finely chopped, not the stalks (medium head of broccoli)
  • 2 carrots, grated
  • 1-2tablespoons tomato paste or pizza sauce
  • 1 can lentils, drained and washed
  • 5-6 sheet frozen puff pastry, thawed
  • olive oil
  • 1 egg

Description

This recipe has evolved over time and is a great way to sneak some extra veggies into the kids!

Method

Step 1 of 5

Heat olive oil in a pan, add onions and sauté until soft. Pre heat oven fan forced oven to 200 celsius.

Step 2 of 5

In a large bowl combine mince, grated carrot, chopped broccoli, lentils, broken up pieces of bread, tomato paste and sautéed onion. Use your hands!

Step 3 of 5

Cut a sheet of pastry in half. Spoon mixture along centre of sheet and make a long sausage shape. Roll pastry over to create the sausage roll shape. Cut in half again to make 2 large sausage rolls or into bite sized pieces if you prefer.

Step 4 of 5

Place sausage roll onto an oven tray with baking paper on it, with joined edge facing down. Wash with egg.

Step 5 of 5

Cook in oven for approximately 25 minutes or until golden. Serve with Tomato sauce. Suitable to freeze - if they last that long!
