Description
These are lovely, easy versions of sausage rolls, and use just a few ready-made ingredients.
Method
Step 1 of 5
Preheat the oven to 220°C (Gas 7). Line 2 baking trays with baking parchment.
Step 2 of 5
Use a pair of scissors to cut through a sausage skin and gently ease it away, leaving a skinless sausage. Re-roll it with your hands, and repeat, to get 12 even-sized rolls of sausagemeat.

Lay the sheet of puff pastry out onto a lightly floured work surface and roll it out just a little, if necessary, to form a 24x36cm rectangle. Cut this into twelve 6x12cm pieces.
Step 4 of 5
Brush a pastry square lightly with egg. Place a sausage at the end nearest you, then roll it up so that the pastry overlaps slightly, sealing in the sausage. Place each seam-side down and cut it with a sharp knife into 3. Repeat to make 36 bite-sized rolls. Brush with egg and bake for 15 minutes.

Remove the sausage rolls from the oven and transfer them to a wire rack to cool until you are ready to serve them, either warm or cold.
