Slow Cooked Lamb With Cheesy Mash
12 Ingredients
- 80grams parmesan, grated
- 1 cup skim milk
- 4 potatoes, washed, peeled and quartered
- 140grams tomato paste, no added salt
- 400grams Woolworths Simply Simmer Veggie Mix
- 1tablespoons olive oil
- 1tablespoons cinnamon
- 1/4 cup red wine vinegar
- 1 lemon, zested
- 300grams lamb shank, trimmed off sinew and visible fat
- 3 sprigs rosemary
- 400grams can Italian diced tomatoes, no added salt

Sauté the simply simmer veg mix in the pot for 2 minutes, then add the tomato paste, red wine vinegar, tinned tomatoes, 2 cups water, lemon zest, cinnamon, rosemary and stir and cook for a further 2-3 minutes or until combined. Add the lamb shanks back into the pot, turn heat to low, and simmer on the stove over a low heat for 3 hours or until lamb meat is tender. Top up with water to cover lamb if necessary and stir occasionally.

Shred lamb meat from bone using a fork and tongs, then discard bones. Divide mashed potato amongst plates and then top with slow cooked lamb to serve.
