Cheesy mash
  • 80grams parmesan, grated
  • 1 cup skim milk
  • 4 potatoes, washed, peeled and quartered
  • 140grams tomato paste, no added salt
  • 400grams Woolworths Simply Simmer Veggie Mix
  • 1tablespoons olive oil
  • 1tablespoons cinnamon
  • 1/4 cup red wine vinegar
  • 1 lemon, zested
  • 300grams lamb shank, trimmed off sinew and visible fat
  • 3 sprigs rosemary
  • 400grams can Italian diced tomatoes, no added salt

Method

Step 1 of 4

Add the olive oil to a heavy based pot over a high heat. Seal shanks in a heavy based pot over a high heat for 10 minutes. Remove from the pot and set aside. 

Step 2 of 4

Sauté the simply simmer veg mix in the pot for 2 minutes, then add the tomato paste, red wine vinegar, tinned tomatoes, 2 cups water, lemon zest, cinnamon, rosemary and stir and cook for a further 2-3 minutes or until combined. Add the lamb shanks back into the pot, turn heat to low, and simmer on the stove over a low heat for 3 hours or until lamb meat is tender. Top up with water to cover lamb if necessary and stir occasionally.

Meanwhile, to make the cheesy mash, boil potatoes in a medium sized pot of water for 15 minutes or until tender. Drain potatoes and add back to hot pot with heat turned off. Mash and combine with milk and parmesan cheese and season with pepper.

Step 4 of 4

Shred lamb meat from bone using a fork and tongs, then discard bones. Divide mashed potato amongst plates and then top with slow cooked lamb to serve.
