Steak & Mushroom Pie

- 140grams tomato paste
- 8 sheets filo pastry
- 400grams Simply Simmer Veggie Mix
- 2 1/2 cup mushrooms
- 1/4 cup worcestershire sauce
- 5milliliter extra virgin olive oil spray
- 1packets rosemary
- 400grams beef chuck steak
Method
Step 1 of 4
Spray oil onto a heavy based non-stick pot over high heat. Add steak and cook, stirring occasionally, until a brown crust forms, about 5-6 minutes.
Step 2 of 4
Add veggie mix, mushrooms and rosemary and cook, stirring, for 4-5 minutes. Stir in tomato paste and Worcestershire sauce and cook for 1 minute.
Step 3 of 4
Reduce heat to low and cook for 45 minutes or until beef is tender, stirring occasionally (add 1/2 cup water in between if necessary to stop from sticking).
Step 4 of 4
Preheat oven to 180°C. Lightly spray a rectangular or square baking dish (approximately 24cm) with oil. Layer 2 sheets of filo pastry with spray oil in between. Lay across the prepared dish vertically. Repeat with another 2 sheets of filo and lay across the baking dish horizontally. Add beef mixture and fold pastry sides in to cover the beef. Spray 4 sheets of filo with oil, scrunch each sheet and cover the top of the pie. Bake for 20 minutes or until pastry is golden.
