- 5 medium tomatoes (cut into wedges)
- 750grams free range chicken breasts
- 5milliliter extra virgin olive oil spray
- 2 baby leaf salad
- 1/2tablespoons olive oil
- 1 free range egg
- 2 Macro Organic chickpeas (no added salt)
- 1/4 cup fresh oregano (chopped)
- 4 clove garlic
- 1/2 cup light tasty shredded cheese
- 1 cup mixed grain breadcrumbs

Step 1 of 4
Preheat oven to 190°C. Line two baking trays with baking paper.
Step 2 of 4
Crush 1 clove of garlic, mix with oil and oregano and rub into chicken. Place chicken on one of the prepared trays.

Meanwhile, to make the chickpea tots, place chickpeas, breadcrumbs, remaining garlic, cheese and egg in a food processor and blitz until combined. Season with pepper to taste. Roll portions of mixture into 2cm-diameter logs and cut into 3cm pieces to form tots. Spread on second prepared tray and spray with oil.

Bake both trays for 20 minutes or until chicken is cooked through and tots are crispy. Slice chicken and serve with salad, tomato, and chickpea tots.
