- 4 wholemeal bread rolls, to serve (to serve)
- 2tablespoons parsley sprigs, to serve (to serve)
- 400grams Woolworths Simply Simmer Veg
- 1tablespoons olive oil
- 1 cup salt-reduced chicken stock
- 1 1/2 cup macaroni, cooked (cooked)
- 320grams hot roast chicken breast, skin removed, meat shredded (meat shredded)
- 2 clove garlic, minced (minced)
- 400grams no-added-salt diced Italian tomatoes

Method
Step 1 of 3
Heat oil in a medium saucepan over medium heat. Add garlic and sauté for 1 minute. Add the simmer veg, and cook, stirring, for 2 minutes.
Step 2 of 3
Add tomatoes, chicken stock and 4 cups of water. Season with pepper to taste. Cover and cook for 10 minutes or until vegetables are softened.
Step 3 of 3
Stir in macaroni and chicken, divide amongst bowls. Garnish with parsley and serve with bread rolls.
