  • 1/2tablespoons sesame oil
  • 100grams vermicelli noodles
  • 2 cm piece fresh ginger, grated
  • 400grams simply simmer veggie mix
  • 1 cup chicken stock, salt-reduced
  • 3 slices multigrain sourdough, halved
  • 2 clove garlic, crushed
  • 1 cup frozen Australian peas & corn

Method

Step 1 of 3

Add sesame oil to a medium saucepan over low-medium heat. Add garlic, ginger and simply simmer veggies and cook, stirring, for 8 minutes.

Step 2 of 3

Add peas and corn and cook for 1 minute, or until heated through.

Step 3 of 3

Add stock, 1L water and vermicelli noodles and cook for 3 minutes or until noodles are softened. Serve with bread on side.
