- 100grams small button mushrooms, sliced and quartered
- 50grams snow peas, shredded
- 1/2 bunch broccolini, sliced
- 90grams buckwheat noodles
- 1 lemon, juiced
- 2teaspoons tamari
- 1/4 cup ricotta
- 1 egg, soft-boiled

Method
Step 1 of 3
Prepare noodles as per packet instructions. Drain and rinse well. Toss with tamari and sesame oil.
Step 2 of 3
Place broccolini and peas into a bowl and cover with boiling water for 1 minute. Drain and refresh in cold water. Drain well.
Step 3 of 3
Arrange noodles, mushrooms and blanched vegetables in a bowl. Roughly mash avocado with ricotta and lemon juice. Halve egg and add to bowl with avocado mash.
