- 40grams snow pea sprouts
- 3/4 cup green cabbage, shredded
- 3/4 cup red cabbage, shredded
- 1/2 red capsicum, sliced
- 1/4 red onion, thinly sliced
- 2tablespoons flat-leaf parsley, chopped
- 2 radishes, thinly sliced
- 2tablespoons pumpkin kernels, toasted
- 2teaspoons extra virgin olive oil
- 1 cup canned chickpeas, drained
- 1teaspoons sesame seeds, toasted
- 1/2 cup brown rice, cooked (or barley)
- 95grams can tuna in springwater, drained, flaked
Method

Combine brown rice, pumpkin kernels and parsley in a bowl. Add cabbage, chickpeas, tuna, sprouts, capsicum, onion and radish. Scatter with sesame seeds and drizzle with oil to serve.
