  • 40grams snow pea sprouts
  • 3/4 cup green cabbage, shredded
  • 3/4 cup red cabbage, shredded
  • 1/2 red capsicum, sliced
  • 1/4 red onion, thinly sliced
  • 2tablespoons flat-leaf parsley, chopped
  • 2 radishes, thinly sliced
  • 2tablespoons pumpkin kernels, toasted
  • 2teaspoons extra virgin olive oil
  • 1 cup canned chickpeas, drained
  • 1teaspoons sesame seeds, toasted
  • 1/2 cup brown rice, cooked (or barley)
  • 95grams can tuna in springwater, drained, flaked

Method

Step 1 of 1

Combine brown rice, pumpkin kernels and parsley in a bowl. Add cabbage, chickpeas, tuna, sprouts, capsicum, onion and radish. Scatter with sesame seeds and drizzle with oil to serve.
