  • 350grams La Molisana wholewheat spaghetti
  • 320grams punnet mix-a-mato tomatoes, halved
  • 1 cup basil leaves
  • 60grams parmesan, grated
  • 90grams mixed leaves, to serve

Method

Step 1 of 3

Heat oil in a large, deep frying pan over medium heat. Add onion, carrot and celery, then cook for 5 minutes or until vegetables have just softened. Add mince and cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Add pasta sauce, paste and vinegar, then bring to the boil. Reduce heat to low and simmer for 15 minutes or until mixture has thickened slightly. Season with pepper.

Step 2 of 3

Meanwhile, cook pasta in a large saucepan of boiling water according to packet instructions. Drain. Return to saucepan.

Step 3 of 3

Spoon bolognese over pasta. Top with tomato, basil and parmesan. Serve with mixed leaves.
