- 200grams green beans, trimmed
- 500grams sweet potato, peeled, cut into long wedges
- 4 small chicken breast fillets
- 5milliliter extra virgin olive oil spray
- 400grams can diced tomatoes with onion, garlic and basil
- 1/3 cup parmesan, finely grated
- 1/3 cup breadcrumbs
Method
Step 1 of 4
Preheat oven to 220°C. Line a baking tray with baking paper. Spread sweet potato on tray and spray with oil. Place on top shelf of oven and bake for 25 minutes or until tender and golden.

Place chicken in a shallow baking dish and spoon over tomatoes.
Step 3 of 4
Combine breadcrumbs and parmesan in a bowl. Sprinkle mixture over chicken and bake for 15-20 minutes or until chicken is cooked through and topping is golden and crisp.
Step 4 of 4
Meanwhile, bring a saucepan of water to the boil. Add beans and cook for 2 minutes or until just tender. Drain. Serve chicken with sweet potato and beans.
