  • 2 tomatoes, thinly sliced
  • 1 zucchini, grated
  • 1 lemon, wedges (to serve)
  • 2teaspoons wholegrain mustard
  • 300grams mixed leaf iceberg lettuce blend
  • 4 wholegrain wraps
  • 300grams flank steak, trimmed of excess fat and flattened slightly
  • 4 slice swiss style light cheese

Method

Step 1 of 2

Season steaks generously with pepper. Heat a frying pan over medium to high heat and cook steaks for 3 minutes each side for medium rare. Transfer to a plate to rest for 2 minutes, covering with aluminum foil.

Step 2 of 2

Spread each wrap with 1/2 tsp of wholegrain mustard, followed by salad leaves, zucchini, tomato and one piece of Swiss cheese. Thinly slice steak and divide among wraps. Squeeze over lemon, fold and serve.
