For the mash
  • 800grams potato, peeled and chopped
  • 1/3 cup milk
  • 50grams butter
  • 500grams chicken breasts, finely diced
  • 2 medium carrots, peeled and diced
  • 1 large white onion, peeled and diced
  • 1 pinch salt
  • 1 pinch pepper
  • 2 cloves garlic, peeled and diced
  • 3tablespoons flour
  • 3/4 cup beef stock

Description

A take on the traditional cottage pie, this chicken dish is hearty and full-flavoured

Method

Step 1 of 6

Pre-heat the oven to 180°C. Cook the potatoes in a pot of boiling salted water with the salt for 20 minutes until cooked fully.

Step 2 of 6

Drain the excess liquid from the potatoes and add the butter and milk. Mash ingredients together until a nice smooth consistency and leave to one side.

Pan fry the diced chicken breasts on non-stick pan for 3 minutes while tossing.

Step 4 of 6

Add the chopped onions, carrots and garlic to the pan and fry for a further 2 minutes while stirring. Add the flour, salt and pepper to the pan and combine fully.

Step 5 of 6

Add the beef stock and allow to simmer for 10 minutes until the sauce reduces. Remove from the heat and place into your choice of baking tray and layer the top with mashed potato.

Step 6 of 6

Bake in the oven for 15 minutes depending on your choice of baking tray. Check to ensure its not bubbling before serving.
