Shepherd's Pie with Sweet Potato

- 30grams butter
- 2 cup green beans, steamed (to serve)
- 1 large carrot, grated
- 600grams sweet potato, peeled, chopped
- 400grams cannellini beans, rinsed, drained
- 1/2 cup parmesan, grated
- 2 cup pasta sauce
- 400grams lamb mince
- 4 ramekins
- 2teaspoons olive oil

Method
Step 1 of 4
Preheat oven to 190°C.
Step 2 of 4
Heat oil in a frying pan over high heat. Brown mince, breaking it up with a spoon, for 5 minutes or until golden. Add sauce and carrot and bring to the boil. Reduce heat and simmer, covered, for 20 minutes. Add beans.
Step 3 of 4
Meanwhile, steam or boil sweet potato for 15-20 minutes or until very tender. Drain. Mash in butter with a potato masher until smooth. Add parmesan and stir to combine.
Step 4 of 4
Spoon mince mixture into 4 ramekin dishes. Top with mash. Place on a tray and bake in the oven for 20 minutes or until potato browns. Serve with beans.
