  • 1 medium white onion, peeled and diced
  • 1 large carrot, peeled and diced
  • 1 medium leek, peeled and diced
  • 150grams peas
  • 3 cloves garlic, peeled and crushed
  • 1 1/4 cups beef stock
  • 1tablespoons thyme, chopped
  • 1tablespoons rosemary, chopped
  • 10 medium potatoes, peeled and cubed
  • 10grams butter
  • 8teaspoons milk
  • 1 pinch salt
  • 1teaspoons cracked black pepper

Description

This traditional favourite is a filling dinner, perfect for a cosy evening in.

Method

Step 1 of 5

Pre-heat the oven to 170°C. Heat up a pan to a medium heat and dry the minced lamb while tossing for 10 minutes or until starts to turn brown.

Step 2 of 5

Add the chopped onion, carrot, leek, garlic and peas and continue to fry for a further 5 minutes. Add the beef stock and herbs and allow to simmer for 10 minutes or until the sauce starts to reduce.

Step 3 of 5

Cook your cubed potatoes in salted water for 15 minutes and then drain the liquid. Mash the seasoning, milk and butter into the potatoes and set to one side.

Step 4 of 5

In a casserole dish, place your lamb mix at the bottom without the liquid. Top with the mashed potatoes.

Step 5 of 5

Bake in oven for 25 minutes or until the top begins to brown and serve with the juice from the lamb if needed.
