- 1tablespoons olive oil
- 1 onion, chopped (large)
- 4 clove garlic, finely chopped
- 1 red capsicum, finely chopped (small to medium)
- 2 rasher bacon, chopped
- 500grams beef or pork & veal, minced
- 1 cup frozen veggies - like peas, corn & carrot
- 1/3 cup red wine (optional)
- 1 cup beef stock (increase this by a 1/3 if not using wine)
- 2tablespoons worchestershire sauce
- 2tablespoons plain flour
- 1tablespoons tomato paste
- 3 sprigs fresh thyme
- 3tablespoons fresh parsley, chopped
- salt & pepper (to taste)
- 400grams potatoes, steamed & mashed

A delicious family favourite.
Method
Step 1 of 5
Gather all ingredients together into a medium pot on medium heat, add oil, onions, garlic, capsicum and bacon. Saute for about 5 minutes or until veggies have softened.
Step 2 of 5
Add mince, breaking up any lumps, browning for about 4 minutes, add tomato paste to one side of the pot and cook for a minute. Add wine (if using) and cook off for about a minute. Add flour, stir well. Cook stirring for about 2 minutes. Add beef stock and worchestershire sauce. Mix well.
Step 3 of 5
Add in thyme, salt & pepper and frozen veggies. Mix well. Lid on. Turn heat down to low. Simmer for 40 minutes. Lastly add the parsley.
Step 4 of 5
Spoon mixture into 4 x 1 1/2 cup capacity ramekins. Top each one with mashed potato, decorate the top with a fork. Place under a hot grill (200 degrees) until nicely golden.

Serve with steamed veggies of your choice or a fresh Garden Salad and Enjoy!
