- 1 brown onion, sliced
- 1 carrot, thinly sliced
- 1 small red capsicum, diced
- 1 cup broccoli, blanched in microwave
- 2teaspoons minced garlic
- 2tablespoons curry powder
- 1 1/2tablespoons oil
- 1tablespoons chicken stock powder
- 300milliliter cream

So easy, adjust curry powder to taste as desired.
Method
Step 1 of 3
Blanch chopped broccoli in a bowl of water for approximately 3 minutes on HIGH in microwave. Set aside.
Step 2 of 3
Heat oil in large frypan, add garlic, curry powder. Once fragrant add chicken and onion - cook until browned. Add veg (including broccoli) cook for further 2 minutes.
Step 3 of 3
Add stock powder and cream. Simmer for 5 minutes on low stirring frequently. Serve with rice.
