  • 1tablespoons extra virgin olive oil
  • 400grams chuck beef steak, cut into 3cm cubes, trimmed
  • 2 cloves garlic, crushed
  • 3 sticks celery, finely chopped
  • 1tablespoons rosemary, finely chopped
  • 140grams no-added-salt tomato paste
  • 800grams Woolworths no-added-salt diced Italian tomatoes
  • 250grams frozen mixed corn, carrot & peas vegetable mix
  • 4 cups macaroni, cooked
  • 2tablespoons coarsely chopped continental parsley leaves

Description

This one-pot meal with winter vegetables, chuck steak and macaroni is the perfect dinner to warm and your loved ones up.

Method

Step 1 of 4

Heat oil in a large saucepan over high heat. Add beef and cook for 2-3 minutes, stirring occasionally, or until browned all over.

Step 2 of 4

Reduce heat to medium and add garlic, celery and rosemary and cook, stirring for 1-2 minutes or until tender.

Step 3 of 4

Add tomato paste and stir to combine. Transfer to a slow cooker, add tomatoes and 2 cups water and cook on low heat for 6 hours, or until beef is tender. In the last hour of cooking, add vegetable mix.

Step 4 of 4

Add cooked pasta to beef mixture and stir to combine. Season with pepper to taste. Serve sprinkled with parsley.
