10 Ingredients

For the meatball
  • 500grams chicken breasts, finely chopped
  • 4 cloves garlic, peeled and diced (2 for meatballs, 2 for sauce)
  • 1 medium white onion, finely diced
  • 60grams panko bread crumbs
  • 1 medium egg, white only
For the sauce
  • 1tablespoons olive oil
  • 200grams mushrooms, washed and sliced
  • 2/3 cup cream
  • 1/3 cup vegetable stock
  • 2teaspoons paprika

Description

A traditional Russian inspired dish with a rich flavour.

Method

Step 1 of 5

Prepare the meatballs by combining the diced chicken, 2 cloves of chopped garlic, onion, crumbs and egg white. Mix fully until combined and then roll into small tightly packed balls.

Step 2 of 5

Pan fry the balls on a non-stick pan on a medium heat for 4 minutes turning occasionally. Remove from the pan and set to one side.

Step 3 of 5

To make the sauce, pan fry the onions and mushrooms for 3 minutes with the oil on a medium heat. Add the paprika and mix.

Step 4 of 5

Now add the cream and vegetable stock to the pan and allow to simmer for 5 minutes.

Step 5 of 5

Add the balls to the pan and allow to simmer on a medium heat for 10 minutes wo the sauce can reduce and thicken. Remove from the heat and serve with a choice of side.
