  • 4 chicken thighs, thinly sliced (about 500g)
  • 2teaspoons olive oil
  • 1 medium onion, chopped finely
  • 400grams swiss brown mushrooms, sliced thinly
  • 2 cloves garlic, smashed, chopped finely
  • 2teaspoons ground paprika
  • 1teaspoons smoked paprika
  • 1tablespoons worcestershire sauce
  • 2teaspoons dijon mustard
  • 300milliliter sour cream
  • 1tablespoons tomato paste
  • 6 cups cabbage, finely shredded
  • 1 granny smith apple, peeled, finely sliced (for cabbage)
  • 50grams unsalted butter (for cabbage)
  • salt (to taste)
  • pepper (to taste)

Description

A delicious, rich, creamy chicken stroganoff with a beautiful smokey flavour. Accompanied with buttery cabbage and apple, just perfect for winter.

Method

Step 1 of 7

Gather all ingredients together... One large non stick Pot for Stroganoff and a large flat Pan for Cabbage are required

Step 2 of 7

Into the large non stick Pot on high heat, add one teaspoon of Oil, once heated, add half the Chicken..Cook stirring occasionally for 3 minutes or until Chicken is golden brown and cooked through..Remove to a plate and repeat with the last of the Chicken.

Step 3 of 7

Add remaining Oil, reduce heat to medium, add Onion, Garlic and Mushrooms, cook stirring for 5 minutes or until Veggies are softened.

Step 4 of 7

Add both Paprika's, stir to combine and cook for a minute or until fragrant.

Step 5 of 7

Return Chicken (and any juices) to the Pot, along with Tomato Paste, Dijon Mustard, Worcestershire Sauce, Sour Cream and a good grinding of Pepper, stir to combine.

Step 6 of 7

Reduce heat to simmer, lid on, simmer for about 8 minutes or until Mushrooms are tender..Check Seasoning.

CABBAGE INSTRUCTIONS - Meanwhile whilst Chicken is simmering, heat Butter in the large flat pan on medium/high heat, add Cabbage (it seems a lot, but does cook down) saute for about 5 minutes or until softened slightly, add Apple and saute for a further 3 minutes or until Cabbage and Apple are cooked, season with Salt & Pepper - serve immediately and enjoy...
