  • 2tablespoons butter (to grease dish)
  • 2tablespoons caster sugar (to coat)
  • 2 egg yolks
  • 2tablespoons cointreau (optional)
  • 1/3 cup raspberries (fresh or frozen)
  • 1/2 cup icing sugar
  • 4 egg whites
  • 2tablespoons icing sugar (to dust)

Description

An easy, light dessert that is sure to please. Everything can be prepared in advance, then all you need to do is whip the egg whites, mix, bake and serve.

Method

Step 1 of 9

Preheat oven to 170 degrees fan forced.

Step 2 of 9

Lightly grease 4 x 250 ml ramekins with butter and coat with caster sugar shaking away excess sugar.

Put egg yolks, liqueur (if using), raspberry and two tbl of the icing sugar mixture into a bowl and set aside. If using frozen raspberries allow them to thaw.

Beat egg whites until soft peaks form, gradually adding the remaining icing sugar and beat until firm peaks.

Mix the yolk and raspberry mixture until well combined. I use the same beaters I use to whisk the egg whites (less washing up).

Step 6 of 9

Fold the egg white mixture into the raspberry mixture in two batches using a metal spoon. The first lot can be mixed quite vigorously while the second lot of egg whites should be gently folded.

Divide the mixture evenly into the 4 prepared dishes.

Dust tops with extra icing sugar and serve immediately with ice cream or double cream for maximum enjoyment.

Bake for approx 15 minutes or until soufflés are puffed up and lightly browned.
