  • 1 cup plain flour
  • 1 1/2 cup thickened cream, whipped
  • 115grams unsalted butter, softened
  • 1/2teaspoons almond essence
  • 1 cup strawberries, hulled and halved
  • 400grams strawberries, hulled (approx 2 punnets)
  • 1/2teaspoons baking powder
  • 1/2teaspoons bicarbonate of soda
  • 2tablespoons white balsamic
  • 1/2 cup buttermilk
  • 1 egg
  • 2tablespoons basil leaves
  • 168grams raw caster sugar (save 17g for later)
  • 1/4 cup caster sugar
  • 1/4 cup almond meal
  • 1teaspoons vanilla extract

Method

Step 1 of 7

Preheat oven to 180°C. Grease a 22cm fluted round cake pan. Stir flour, almond meal, baking powder, bicarbonate of soda and 1/4 tsp salt in a large bowl and set aside.

Using an electric beater, beat together butter and sugar on medium-high for 2 minutes or until light and fluffy. Beat in egg, vanilla and almond essence until smooth.

Reduce speed to low. Add buttermilk and dry ingredients in alternate batches, beating well between each addition. Pour batter into the prepared pan using a spatula to the smooth top.

Arrange strawberries in an even layer on top. Sprinkle with the extra sugar and bake for 20-25 minutes or until just golden and cooked when tested with a skewer. Stand in pan for 10 minutes before turning out onto a wire rack to cool. Allow to cool completely.

Meanwhile, to prepare topping, slice half of the strawberries and combine in a bowl with the whole berries, sugar and balsamic. Stand for 30 minutes or until strawberries are syrupy and fragrant.

Spread cream thickly over cooled cake. Top with macerated strawberries and drizzle with syrup.

Step 7 of 7

Garnish with basil leaves and strawberry flowers (if using).
