  • 2 cooked lobsters, split and prepared
  • 4tablespoons extra virgin olive oil
  • 4tablespoons flat-leaf parsley, finely chopped (to serve)
  • 2 cloves garlic, crushed
  • 3-4tablespoons fresh breadcrumbs
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 lemon, wedges (to serve)

Description

This Neapolitan dish is easy to prepare.

Method

Step 1 of 3

Preheat the oven to 190° C. Put the split lobsters into a large baking tray or baking dish.

Step 2 of 3

Heat the olive oil in a small saucepan, add the parsley and garlic, and sizzle for 30 seconds, then stir in the breadcrumbs and season well.

Step 3 of 3

Spoon the mixture over the cut lobster flesh. Bake in the oven for 7-10 minutes, or until the lobsters are piping hot. Remove from the oven and arrange on a large, warmed serving dish with lemon wedges.
