Description

It doesn't get any easier than this recipe for buttery shortbread biscuits, a Christmas must-have that's perfect to gift to loved ones.

Method

Step 1 of 4

Preheat oven to 150°C/130°C fan-forced. Grease and line 2 large baking trays.

Step 2 of 4

Using an electric mixer, beat butter and sugar until light and fluffy. Sift over flours and stir until well combined.

Step 3 of 4

Turn mixture out onto a lightly floured surface. Knead dough until it comes together. Divide dough in half. Roll dough between 2 sheets of baking paper until 3mm thick. Using a 6cm round cutter, cut rounds from dough. Re-roll scraps, then repeat cutting rounds to make a total of 30. Place rounds, 2cm apart, on baking trays. Using a 3.5cm star-shaped cutter, cut stars from centres of half the rounds and discard. Refrigerate rounds for 10 minutes to chill.

Bake for 12 minutes or until pale golden. Stand for 5 minutes. Transfer to a wire rack to cool completely, then serve
