  • 1 1/2 cup macadamia nuts, roughly chopped
  • 1tablespoons manuka honey
  • 375grams unsalted butter
  • 1/2 cup brown sugar
  • 1/3 cup caster sugar
  • 1 1/2teaspoons vanilla essence
  • 1 1/2 cup white choclate bits
  • 3/4 cup rice flour
  • 3/4 cup almond meal
  • 1 cup gluten free flour

Description

Great for Christmas, or anytime, I actually make these each year and put them in a nice cannister and give to family and friends.

Method

Step 1 of 9

Preheat oven to 150C normal or 140C fan forced

Step 2 of 9

Cream butter, sugars and honey and vanilla, till light and fluffy.

Step 3 of 9

Transfer mix into a very wide bowl.

Step 4 of 9

Mix the nuts and chocolate through the flour.

Step 5 of 9

Mix the flour, nuts and Chocolate through the creamed mix, 1/3 at a time, do not over mix or you will end up with a tough biscuit.

On a very lightly floured clean bench empty the mix and roll gently into logs, wrap each log in baking paper and give it a roll, twist the ends of the paper so it looks like a bon bon. Put in the fridge and let rest 20 minutes

Step 7 of 9

Unwrap the logs and slice into 2cm rounds and place on cookie sheets (no need to grease them) and only need to leave about a 1cm between each.

Step 8 of 9

Place in your preheated oven and cook till done approximately 25 to 30 minutes do not overcook, if after 15 minutes they are looking browned, turn the oven down a further 10 degrees.

Transfer onto wire racks to cool, don't store until completely cold.
