  • 4 1/2tablespoons extra virgin olive oil (save 0.5 tbs for grilling)
  • 2 lemons, juice only
  • 1teaspoons sea salt
  • 2teaspoons freshly ground black pepper
  • 2tablespoons parsley, finely chopped
  • 1 clove garlic, crushed and finely chopped
  • 1 loaf seitan
  • 6 pitta breads
  • 3 small plum tomatoes, cored and cut into small dice
  • 1/2 small red onion, very thinly sliced
  • 1 cup plant-based tzatziki
  • 1teaspoons sweet paprika
  • 140grams romaine lettuce

Method

In a small bowl, whisk together the olive oil, lemon juice, flat-leaf parsley, salt, black pepper, and garlic.

Slice the seitan loaf very thinly and place the slices in a single layer in a large baking dish. Pour the marinade over the top and set aside at room temperature for 25 minutes.

Preheat a grill and brush the grill with a little olive oil.

Remove the seitan slices from the marinade, add to the grill, and grill for about 1 minute per side or until charred.

Quickly grill the pitta breads just to warm them. Evenly divide the seitan among the pitta, and top with romaine lettuce, plum tomatoes, and red onion. Drizzle each gyro with the plant-based tzatziki, sprinkle with sweet paprika, roll up, and serve immediately.
