Prawn Cocktail-style Wraps With Avocado & Red Capsicum Mayonnaise

- 3 red capsicums, deseeded and roughly chopped (save 1 for later,deseeded and diced)
- 1 handful crisp lettuce leaves, such as Romaine or Cos, shredded
- 4tablespoons mayonnaise
- 1 pinch mild paprika
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 12 cooked prawns, peeled and deveined
- 4 flour tortillasingredient tip
- 1 avocado, halved, stoned, peeled, and dicedingredient tip
Method
Step 1 of 3
Put the 2 chopped capsicumsin a food processor, and whiz until smooth. Add the mayonnaise, and whiz again until everything is combined. Sprinkle in a pinch of paprika, and season with salt and black pepper; pulse to mix. Taste, and adjust the seasoning as needed.
Step 2 of 3
Roughly chop 4 of the prawns, and stir into the mayonnaise. Lay the tortillas flat on a clean work surface. Slice in half horizontally, then roll to make a cone, folding the bottom up to enclose one end.
Step 3 of 3
To fill the wraps, divide half of the shredded lettuce between each of the tortilla cones. Layer with the prawn and mayonnaise mixture
