- 65grams butter, chopped into cubes
- 125grams golden syrup
- 1teaspoons sea salt
- 1teaspoons vanilla extract

Description
These elegant sea salt caramels are a real treat and make a great gift you won't want to give away.
Method
Step 1 of 4
Line a baking tin with parchment paper and brush with oil. Heat the cream, 50g of sugar and the butter in a saucepan on medium heat, stirring until the sugar is dissolved. Remove from the heat and set aside.
Step 2 of 4
In a large, heavy bottomed sauce pan mix the rest of the sugar and the golden syrup with 3 tablespoons of water. Cook on medium heat, stirring, until the sugar has dissolved then bring to the boil. Cook for 1 minute without stirring until it starts to get darker. Check the temperature with a sugar thermometer. Keep cooking until it reaches 149°C.
Step 3 of 4
Whisk the cream mix into the caramel and cook until it reaches 120°C. Take off the heat and stir in the sea salt and vanilla.
Step 4 of 4
Pour the mix into a the baking tin and smooth out with a spatula. Leave to set at room temperature and chill for 1 hour in the fridge. Slice into 40 pieces.
