  • 280grams raw almonds
  • 40grams cocoa powder
  • 2tablespoons coconut oil, melted
  • 2tablespoons maple syrup
  • 165grams raw cashews, soaked in water for 4 hours, drained
  • 12 large majol dates, pitted, chopped
  • 1 cup almond milk
  • 170grams dark chocolate chips, melted

Description

Smooth, rich and silky dark chocolate and cashew mousse is set inside a crunchy crust that is completely vegan with no baking involved.

Method

Step 1 of 5

Add the almonds and cocoa powder to a small food processor, pulse until it resembles coarse breadcrumbs. Pour in the coconut oil and maple syrup pulsing a few more times to combine.

Step 2 of 5

Press the almond crust firmly into the bottom of a pie pan evening it out pressing the crust into the sides of the pan. Place into the fridge to firm up for 30 minutes.

Step 3 of 5

Blend the cashews, chopped dates and almond milk together for 2-3 minutes until smooth. Pour in the melted chocolate blending everything together.

Step 4 of 5

Remove the pie pan from the fridge pouring the cashew chocolate batter into the pan. Cover and let the pie set overnight in the fridge or in the freezer for 4 hours.

Step 5 of 5

Slicing the pie using a sharp knife. Placing it back into the fridge until ready to dig in.
