- 5tablespoons golden syrup
- 10grams butter (to grease)
- 2teaspoons bicarbonate soda
- 200grams dark chocolate, chopped finely
- 1teaspoons sea salt

Description
Homemade honeycomb is so easy to whip up and is so much nicer than store bought.
Method
Step 1 of 5
Place the sugar and golden syrup in a deep, heavy bottomed saucepan on low heat to melt the sugar. Grease a baking tin with the butter and set aside.
Step 2 of 5
Increase the heat and simmer until the mixture thickens and turns an amber colour.
Step 3 of 5
Fill a glass with ice cold water and drop a little bit of the mixture in. If it forms a soft, smooth ball and doesn't stick then it is ready. If not, heat for a little longer.
Step 4 of 5
Turn off the heat and quickly tip in the bicarbonate of soda and beat continuously with a wooden spoon as the mixture foams up. Quickly pour the mix into the baking tin and leave to harden for 1 hour.

Place the chopped chocolate in a large bowl and microwave in 30 second intervals until fully melted when stirred. Let the chocolate stand for 5 minutes. Break the honeycomb into shards, dip in the chocolate and place on a parchment lined baking sheet. Sprinkle with sea salt and leave to set for 1 hour.
