- 250grams cherry tomatoes
- 1/2 red onion, cut into 8 thin wedges
- 5milliliter extra virgin olive oil cooking spray

- 1 cup baby spinach leaves

Description
This easy, budget-friendly traybake is packed with flavour, thanks to the combination of succulent sausages, fried eggs, cherry tomatoes and crispy chips.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Arrange chips, in a single layer, on a large baking tray. Place sausages, tomatoes and onion on a separate large baking dish. Spray with oil.
Step 2 of 4
Place both trays in oven and cook, swapping halfway though, for 25 minutes.
Step 3 of 4
Remove sausage dish from oven. Crack eggs, one at a time, into dish. Return to the oven. Cook for a further 5 minutes for a soft yolk or until cooked to your liking.
Step 4 of 4
Scatter spinach on top of sausage tray. Serve with chips.
