- 2teaspoons extra virgin olive oil
- 400grams pkt Woolworths COOK simmer veggie mix
- 1 brown onion, finely chopped
- 800grams Woolworths no-added-salt lentils, drained, rinsed
- 40grams French onion soup mix
- 2tablespoons Worcestershire sauce
- 2tablespoons tomato paste
- 475grams Woolworths classic mashed potato
- 1/2 cup shredded mozzarella
- 25grams unsalted butter, cut into 1cm pieces
- 1/4 bunch continental parsley, leaves picked
Description
With its budget-friendly ingredients, soul-warming flavours, and contrasting textures, this delicious French onion lentil and mash bake will leave a lasting impression.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Heat oil in a large frying pan over medium heat. Add vegetable mix and onion. Cook for 5 minutes, stirring, or until softened slightly. Add lentils, soup mix, sauce, paste and 1 cups water. Bring to a simmer. Simmer for 10 minutes or until the sauce has reduced slightly.

Spoon mixture into a lightly greased 4cm-deep, 6-cup-capacity baking dish.

Meanwhile, microwave mash on high for 4 minutes or until warmed through. Transfer to a bowl and stir in mozzarella. Preheat oven grill on medium-high heat. Spread mash mixture over lentil mixture to completely cover.
Step 4 of 4
Top mash with butter and place under the grill for 8-10 minutes or until golden. Top with parsley. Serve.
