Description
This classic soup is packed with split peas, ham and vegetables in a flavourful broth, offering a warm and comforting meal that's easy on the budget.
Method
Step 1 of 4
Using a sharp knife, cut several large slits into ham.
Step 2 of 4
Place ham, onion, garlic, carrot and celery in a large saucepan and cover with water until ham is fully submerged (about 2.5-3L). Bring to a boil, then reduce heat to low and simmer for 1 hour. Using a large spoon, skim any scum that rises to the surface and discard.
Step 3 of 4
Add split peas and continue to simmer for another 1 hour and 30 minutes or until ham begins to pull away from the bone. Transfer bone to a board. Using 2 forks, shred ham. Reserve cup frozen peas. Add remaining peas to the soup mixture and simmer for 5 minutes. Remove from heat and using a stick blender, blitz until smooth.
Step 4 of 4
Place reserved frozen peas in a heatproof bowl. Cover with boiling water and stand for 5 minutes or until bright green and tender. Divide soup among bowls. Drizzle with cream. Top with shredded ham, peas and mint. Season with freshly cracked black pepper. Serve.
