  • 4 small squid tubes, cleaned
  • 1 1/2 cup milk
  • 1/2 cup plain flour
  • 1/2 cup cornflour
  • 2tablespoons sea salt flakes
  • 750milliliter vegetable oil (for frying)
  • garlic aioli (to serve)
  • 1 lemon, cut into wedges (to serve)

Description

Master everyone's favourite salt and pepper squid with this easy recipe, then serve it up with a creamy garlic aioli as the perfect dipping sauce.

Method

Step 1 of 4

Cut squid tubes into 1cm-thick rings, then place in a small bowl and cover with milk.

Step 2 of 4

Combine flours and half of the salt flakes in a bowl.

Step 3 of 4

Drain squid, then add to flour mixture and toss to coat. Stand for 10 minutes to help the flour mixture stick to squid.

Step 4 of 4

Heat oil in a deep frying pan or wok over medium-high heat. Cook squid, in batches, for 45 seconds or until just starting to brown. Using a slotted spoon, remove squid from oil and drain on paper towels. Season with remaining salt flakes and pepper, then serve with garlic aioli and lemon wedges.
