- 100grams smoked salmon slices, cut into strips
- 1 small red onion, chopped finely
- 3 roma tomatoes, seeded, chopped finely
- 1 large avocado, seeded and chopped finely
- 1 pinch pepper (for seasoning)
- 1tablespoons chives, finely chopped
- 1tablespoons lemon juice
- 2 sheet frozen shortcrust pastry, thawed
- 1 pinch pink salt ground (to taste)

Method
Step 1 of 6
Preheat oven to 220°C.
Step 2 of 6
Cut 8cm rounds from each pastry sheet. Press into patty pans. You can do these in batches, keeping remaining pastry rounds in fridge until needed.

Bake for about 12 minutes until golden and crisp. Repeat with remaining pastry. Cool.
Step 4 of 6
Meanwhile, combine avocado, tomato, onion and chives in a bowl. Season with salt and pepper.
Step 5 of 6
Using a teaspoon, fill the cooked pastry cases with some of the avocado mixture. Top with salmon strips and drizzle with a little lemon juice.

Serve.
