  • 1/2 rockmelon
  • 1tablespoons basil leaves, finely shredded
  • 2tablespoons extra virgin olive oil (to drizzle)
  • balsamic glaze (a few drops)
  • 1 pinch pepper (for seasoning)
  • 8 slice prosciutto
  • 125grams mascarpone cheese
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 6

Remove seeds from rockmelon with a spoon. Cut into 8 wedges, peel each wedge then cut in half to make 16 pieces.

Step 2 of 6

Combine mascarpone with basil and season with salt and pepper.

Step 3 of 6

Cut prosciutto slices in half lengthways to make 16 long strips.

Step 4 of 6

To assemble, put a rounded teaspoon of the mascarpone onto one side of a rockmelon piece. Wrap with a strip of prosciutto.

Step 5 of 6

Arrange on a platter and drizzle with a little olive oil and a few drops of balsamic.

Repeat with remaining ingredients.
