  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1/2 cup crème fraîche
  • 1tablespoons horseradish, prepared
  • 60grams smoked salmon
  • 25grams red lumpfish caviar
  • 25grams black lumpfish caviar
  • 12 croustade baskets

Method

Step 1 of 2

Mix the crème fraîche and horseradish. Season with salt and pepper. Refrigerate for 30 minutes.

Step 2 of 2

Fill each croustade basket with a spoonful of the crème fraîche mixture, twist a swirl of smoked salmon on top, and top that with a little caviar. Serve within 1 hour.
