- 1 pinch salt
- 1 pinch freshly ground black pepper
- 1/2 cup crème fraîche
- 1tablespoons horseradish, prepared
- 60grams smoked salmon
- 25grams red lumpfish caviar
- 25grams black lumpfish caviar
- 12 croustade baskets
Method
Step 1 of 2
Mix the crème fraîche and horseradish. Season with salt and pepper. Refrigerate for 30 minutes.
Step 2 of 2
Fill each croustade basket with a spoonful of the crème fraîche mixture, twist a swirl of smoked salmon on top, and top that with a little caviar. Serve within 1 hour.
