- 2 fresh ginger, thumb sized pieces
- 2tablespoons fish sauce
- 3 garlic cloves, peeled
- 1/3 cup red wine vinegar
- 200grams caster sugar
- 50grams raisins
- 8 oatcakes (to serve)

To make the jam, pulse 400g tomatoes, 2 red chillies, 2 thumbs peeled fresh ginger, 2 tbsp fish sauce, and 3 peeled garlic cloves in a food processor until chunky.Place 75ml red wine vinegar and 200g caster sugar into a saucepan and bring to a boil. Stir, then add the tomato mixture and 50g raisins and simmer gently for 1 hour over low heat until thick. Cool and store the jam. Serve on oatcakes with goat’s cheese and garnish with chives.
