  • 4 heads endive
  • 200grams gorgonzola
  • 70grams dates, pitted, finely chopped
  • 3tablespoons walnuts, toasted, chopped
  • 2tablespoons chives, fresh, chopped
  • 1 pinch cracked black pepper

Description

Endive leaves make the perfect vessel for creamy blue cheese, dates and walnuts.

Method

Step 1 of 3

Remove the outer leaves of each head of endive and arrange the smaller leaves on a serving platter.

Step 2 of 3

In a medium bowl, mix the gorgonzola, chopped dates, chives and two thirds of the walnuts to form a coarse paste.

Step 3 of 3

Scoop a teaspoon of the gorgonzola mix into each leaf and top with a sprinkling of walnuts. Serve on a round platter, arranged in a circular pattern.
