  • 200milliliter sour cream
  • 1/2 red onion, finely diced
  • 1teaspoons capers, chopped
  • 3 spud lite potatoes, unpeeled
  • 1/2 cup dill, chopped
  • bamboo skewers

Method

Step 1 of 4

Put Spud Lite Potatoes into a pot and cover with cool water. Place on a stove and bring to a boil. Boil for approximately 15 to 20 minutes until soft in the middle. Drain cooked potatoes and once cool, slice into wedges.

Step 2 of 4

In a large bowl, add the sour cream, diced red onion, chopped dill and chopped capers and mix these together.

Step 3 of 4

Now add the sliced Spud Lite Potatoes into the large bowl stir until combined.

Step 4 of 4

Lay out the slices of smoked salmon and place the dressed potato slices onto the salmon and wrap. Place skewer through to hold salmon in place over the potato.
