Description

This Italian-inspired recipe puts a twist on the classic Caprese salad with the classic flavour combo of fresh basil, tomato and mozzarella.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Cut a 2cm-thick slice from tops of each tomato. Reserve tops.

Step 2 of 4

Place tomato bases in a baking dish. Arrange 1 mozzarella slice over each tomato, followed by a basil leaf. Sandwich with reserved tomato tops.

Step 3 of 4

Place garlic, oil, vinegar and sugar in a small bowl, whisking until combined. Drizzle over tomatoes and roast for 12 minutes or until mozzarella has melted and tomatoes begin to blister.

Step 4 of 4

Coarsely chop remaining basil and add to pan juices. Season and serve
