  • 2 clove garlic, crushed
  • 1tablespoons continental parsley, chopped (to serve)
  • 1/2 bunch thyme

Description

Perfect as a side dish, this vegetarian recipe of mixed mushrooms roasted in a moreish garlic butter is sure to delight.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Place mushrooms, cap-sides down, on a baking tray.

Step 2 of 3

Place butter, oil, garlic and thyme in a small bowl and gently whisk with a fork. Spoon two-thirds of the garlic mixture over mushrooms and bake for 20 minutes or until golden.

Step 3 of 3

Drizzle with remaining garlic mixture, squeeze over lemon juice and scatter over parsley. Season and serve.
