- 3grams rolled pork shoulder
- 6 large potatoes
- 3 cup Woolworths frozen corn
- 2 cup Woolworths frozen peas
- 3 large leaks
- 1/3 cup salt
- 1/4 cup oil (of choice)
- 1 jar apple sauce
- 1 jar mint jelly
Description
Sunday roast that's easy and delicious with perfect crackling.
Instruction tip
You can slice the rind before cooking to help it crisp up if desired.
Method
Step 1 of 7
Preheat oven on to 220°C.
Step 2 of 7
Prepare pork by patting dry with a paper towel and pour oil over and rub over the whole roll. Pour salt onto rind and rub in well

Wash and cut the potatoes in half and the leaks and sit in baking dish with the salted pork

Heat up some coconut oil in a frying pan then add the diced red onions from Step 3. Cook the onions until translucent. Then add the remaining ingredients from Step 3 and stir for a few minutes. Also add in turmeric and salt and stir.

Put baking dish into oven once oven reaches 220°C and cook for 45 minutes or until pork rind becomes crackling. Turn the oven down to 180°C and cook for a further 1 hour 15 minutes, until cooked.
Step 6 of 7
Once cooked, remove from oven and sit to rest for at least 10 minutes. Then cut string off and take off the crackling and start carving the meat up and serving.

Serve up meat and veggies and put a few tablespoons of apple sauce on the pork and serve up. Cut crackling and put a piece on every plate but the chef always gets 2 bits.
