  • 75grams caster sugar
  • 3tablespoons water
  • 1 vanilla bean
  • 100grams strawberries
  • 2 sheets puff pastry
  • 5milliliter spray oil
  • 1teaspoons cinnamon sugar

Description

Easy and delicious tarts to enjoy with cream or ice-cream.

Method

Step 1 of 6

Turn on oven to 160 degrees. Chop up rhubarb into 1 cm pieces.

Step 2 of 6

Add rhubarb to saucepan with sugar,vanilla bean and water. Gently cook for 5 minutes stirring regularly. Allow to cool. Remove vanilla bean from mixture.

Step 3 of 6

Cut 4 circles from each sheet of puff pastry. I used my small pie maker cutter for this. Make sure your circle size is bigger than your muffin hole. Use an oil spray to oil the muffin pan. Place the 8 circles of pastry into muffin tin.

Step 4 of 6

Chop strawberries and add to cooled rhubarb mixture. Half fill each pastry cup with fruity mixture. Sprinkle a little cinnamon sugar over the top of each tart.

Step 5 of 6

Place in oven and cook for approximately 20 minutes or until pastry is golden brown.

Step 6 of 6

Sprinkle with icing sugar and add some whipped cream or a spoon of ice cream to the tarts. Enjoy.
