Description

A delicious focaccia using a no knead dough. Add your own touch with anything to dress it up, or leave it plain for dips. Needs to rest and prove for 12 hrs.

Method

Step 1 of 6

The texture of the dough is very soft and will become a little sticky. In a medium sized bowl, mix the flour, yeast, salt and 1 cup of the water together using the handle of wooden spoon (This makes it easier to combine the flour mix, preventing aeration and overworking the dough) Add 2 tbs of olive oil and continue to add water slowly until the dough becomes soft in texture.

When the dough is ready, cover it over with plastic food wrap and place in a warm area to rest and rise for at least 12 hours.

12 hours later - Your dough should have almost doubled in size now and have a bubbly, crater like appearance.

Step 4 of 6

Preheat your oven to 220C. Grease or line a baking or pizza tray with baking paper.

Drizzle with a little olive oil, place your tray in the oven and bake for 25 minutes or until a light golden brown. This is equally delicious hot or cold, perfect with a charcuterie platter.

Step 6 of 6

Rub your hands with a little olive oil, take the dough out and gently shape it to fit the baking tray. The dough will be very sticky and have some elasticity so just keep gently moulding it to fit the tray. It won't matter if it's not evenly spread, that will add to the rustic appearance of the focaccia.
