  • 2 red capsicums
  • 2 cloves garlic, chopped
  • 8 spring onions, finely sliced
  • 500grams fresh cheese-stuffed tortellini
  • 2/3 cup olive oil
  • 25grams Parmesan cheese, finely grated
  • 1 pinch salt
  • 1 pinch pepper

Method

Step 1 of 4

Cut the capsicums into large pieces, removing the cores and seeds. Lay skin-side up under a preheated grill and cook until the skin blackens and blisters. Transfer to a plastic bag, tie the top to enclose and leave to cool, then peel away the skin.

Step 2 of 4

Place the capsicums and garlic in a food processor and blend until fairly smooth. Stir in the spring onions and set aside.

Step 3 of 4

Cook the tortellini in a large saucepan of boiling water according to the packet instructions until al dente. Drain and return to the pan.

Step 4 of 4

Toss the capsicum mixture into the pasta and add the oil and Parmesan. Season to taste with salt and pepper and serve immediately.
